Paul Stalker goes the Extra Mile at the Business Lunch

Paul Stalker of the Extra Mile Partnership gave a wonderful, interactive presentation to the members of the Poole Business Women’s lunch club on motivation and dealing with difficult situations with staff, family or colleagues.  Working through some real situations with some of the women, giving examples of how to deal with issues to get the most positive outcome.  This was followed by an excellent buffet lunch and more networking before wrapping up at 2.30pm

Olympic Sailing Events 2012 and so much more…..


I’ve just come back from a really inspirational meeting regarding the Olympics and associated events surrounding it and I can honestly say I am now really fired up about the whole thing.  Up to this point, I wasn’t that engaged, not that interested, was going to let it pass me by, not now.

How exciting, we have an Olympic event taking place right on our doorstep, Sailing.  Sailing is the UK’s most successful single sporting event.  There will be 480 sailing Athletes taking part in this event.  As the sailing is taking place in Dorset, collectively we will all be part of the largest event outside of London.  And the Olympic Torch Relay is due to be coming through Poole and Bournemouth on the 13th July 2012 carried by several members of our local community.  The Olympics will not be coming back to England in our lifetimes so what an opportunity this is to be involved in something so speical.

Key dates therefore are:  Torch Relay – 12th and 13th July

Olympic Games – 27 July – 12 August.  Sailing 29 July – 11 August

Business Women’s Networking Club – 12th Jan

I have been running the Poole Business Women’s networking club since 2000.  We are a friendly group of professional women who like to combine great food and networking. We welcome non-members and would love you to join us.

We serve you a gorgeous selection of vegetarian, meat and fish dishes brought to your table, buffet-style.  Followed by a platter of three delicious desserts (all to yourself!)

Quick and Easy Spiced Biscuit Recipe

Erica’s Quick & Easy Spiced Biscuit Recipe

This is a very traditional recipe for biscuits that I found in an old Farmhouse cookery book. They are quick to prepare and even speedier to bake.


If you have shied away from making biscuits these are perfect for a first attempt as I find they turn out perfect every time and there’s the added bonus of filling your home with the most amazing aromas.


They are loved by all my family and friends, old and young and I always have to double the quantites so there’s enough to go around!

Baking tray greased or lined with parchment paper

Set the oven to Gas Mark 6 ( 200 degrees c / 400 degrees f)

INGREDIENTS (makes around 18 biscuits)

8 oz plain flour
1/2 teaspoon salt
2 level teaspoons of baking powder
2 level teaspoons of bicarbonate of soda
2 level teaspoons of ground mixed spice
3 level teaspoons ground ginger
1 level teaspoon cinnamon
4 oz margerine (I use a non dairy olive oil spread) or butter
4 oz golden caster sugar
4 tablespoons golden syrup, gently heated

In a large bowl sieve together the flour, spices, salt, baking powder and bicarbonate of soda.
Using your fingertips rub in the flour until the mixture resembles breadcrumbs and then add your sugar.
Pour in the warm syrup and mix together using a wooden spoon, then using your hands work with the ingredients until it becomes more like a dough.

Using floured hands turn the dough out onto a flat surface, make it into a rectangular shape and cut it into 18 pieces, (don’t worry if they vary in size this adds to the rustic appearance!).

Roll the pieces into little balls and space evenly on your baking tray ensuring there is room for them to spread out.

Bake for 12 minutes in the centre of the oven.
Once you have done your first batch you can play around with the timings. This will depend on how crisp and brown you like them, for example if you prefer a lighter, moister biscuit around 10 minutes is good!

Remove from the oven and let them cool for a few minutes before transfering them to a wire rack using a fish slice.

Now simply watch them disappear rapidly!

Seared Sea bass fillet, winter vegetable ragout and hollandaise sauce

Fillet steak, dauphinoise potatoes, vegetable fritters

Monkfish and prawn brochettes, squid rice, red onion and chilli salsa

Grilled local plaice with roasted red pepper, garlic and oregano

Whole roast sea bass, lemon & sea salt, sautéed chicory, beurre blanc

Aubergine Parmigiana with seasonal salad

Desserts

Pannetone bread and butter pudding

Pear Frangipan tart, crème anglaise

Eton Mess with fresh berries

Warm, dark chocolate and orange Zabionne Tart with Vanilla Ice Cream

Lemon and mixed berry semi freddo with fresh berry coulis

Upside down apple syrup cake with cinnamon ice cream

Selection of West Country Cheeses, crackers and homemade chutney
